Mexican food glossary terms

  • burritos

    Burritos consist of a filling (usually shredded or dried meat often mixed with a chille sauce) wrapped in a large, thin flour tortilla. They are a speciality of the State of Sonora where they are often packed into saddlebags.

  • enchiladas

    A tortilla rolled and stuffed usually with a mixture containing meat or cheese and served with a sauce spiced with chilli.

  • fajitas

    A dish consisting of strips of marinated meat, poultry, or vegetables that are grilled over an open fire and served in a tortilla, usually with spicy condiments.

  • nachos

    Tortilla chips, covered in melted cheese.

  • quesadillas

    Quesadillas are tortillas (usually corn but also flour) that are folded over a filling of cheese, sometimes with the addition of a meat or vegetables, and cooked on a greased or ungreased griddle until the cheese is melted and the tortilla is crisp.

  • tacos

    A corn tortilla folded around a filling such as ground meat or cheese.
