Thai Chicken Pizza
Some classics are best left untouched. I'm referring to classics like The Dukes of Hazzard (suffered from a terrible film remake) or The Who song 'My Generation' (suffered from a remake by Hilary Duff). But I'm going to suggest that the classic pizza does not belong in this category.
Don't get me wrong; a classic Italian pizza with tomato sauce, fresh grated cheese and pepperoni is a legendary thing. However, I will argue that there are endless possibilities when it comes to pizza. Mind you, this is a statement coming from someone who likes pineapples on pizza, truly believes there is no wrong way to eat a creme egg and doesn't mind a good rationing of HP sauce on BBQ meat.
That being said, I'm going to share my delicious recipe for Thai chicken pizza.
I was originally inspired to experiment with this recipe after a long stay in California where California Pizza Kitchen dots the map. Upon my return, I had cravings for my favourite CPK pizza, Thai Chicken. I had no choice but to re-create it!
I found a few recipes online, but those chefs always seem to complicate things. While the recipe I found might be better, it has more directions, ingredients, and takes more time. You should test them both out and tell me what you think on Facebook or Twitter. Keep in mind that my cooking style does not lend itself to recipes and measurement, so adjust according to your taste.
Ingredients for two pizzas:
2 pizza bases (I like to buy mine pre-made)
½ cup chunky peanut butter (or 3 massive scoops)
3 tablespoons sweet chilli sauce (or to taste)
2 teaspoons rice vinegar
3 tablespoons soy sauce (or to taste)
2 boneless skinless chicken breasts
¼ cup shredded carrots
3 tablespoons coriander (or to taste)
2 ½ cups shredded mozzarella cheese
DIRECTIONS:
First and foremost, pre-heat the oven to 200C. Now shred your carrots and mozzarella cheese.
The sauce: Combine peanut butter, sweet chilli sauce, rice vinegar, and soy sauce in a bowl. Stir until all ingredients are combined. Add additional ingredients to taste, or to get the right sauce consistency. Not too much of a method, just a little bit of madness.
The chicken: Cut the chicken into bite-size pieces. Heat a frying pan with a bit of olive oil. Fry chicken, adding salt and pepper as chicken cooks. Once chicken is cooked (don't over do it), add the peanut sauce to the frying pan. Stir together until chicken is well coated.
The pizza: Pour chicken/sauce mixture over the pizza base. Add mozzarella, carrots and coriander (preferably in that order).
Cook: Place pizzas in oven on a rack. Bake for about 15 minutes, or until cheese is melted and pizza base is golden.
